The city inspects, not the county
Inside Dallas city limits, food establishments are inspected through the City of Dallas Code Compliance Consumer Health Division on roughly a six-month cycle. Dallas County Health and Human Services holds regulatory authority elsewhere in the county. A group with rooms in Dallas proper and rooms in the surrounding cities is not dealing with one inspecting authority.

A score of 100 to 90 is Very Good and 89 to 80 is Good, both staying on the regular six-month cycle. Drop to 79 through 70 and the result is Passing, with a re-inspection required inside 30 days. Fall to 69 through 60 and it is Failing, with a follow-up in 10 days or closure. The number is not a grade for its own sake — it is the interval on your next visit.
Any customer can ask to see the last report
Under Dallas City Ordinance Sec. 17-10.2(b), a food establishment must hand a copy of its most recent inspection report to any customer or potential customer who asks for it. The city also publishes scores in a searchable public database. There is no version of a weak inspection here that stays internal.
Grease: 90 days or 25 percent, whichever lands first
Dallas Water Utilities runs the fats, oils, and grease program under the Liquid Waste ordinance at Volume I, Chapter 19, Article X of the Dallas City Code. Interceptors must be cleaned as often as necessary and never less than every 90 days, or whenever floating material, sediment, oil, and grease reach 25 percent of the device. The work has to be done by a transporter permitted by the City of Dallas, and the manifests have to be on hand when an inspector asks.
